We always always always have some sort of ham and beans dish for New Year’s Day. Pork, legumes and greens are three delicious and versatile foods that are supposed to be Good Luck when consumed on the first day of the New Year. Why tempt fate if bringing good luck could be as simple as eating ham and beans on a certain day?
Plus it’s a great way to make my family a healthy and filling meal on this chilly winter day. Usually I throw everything in a pot on a whim, this year I took a peek at Allrecipes.com and found a simple ham and beans recipe to start with. I’ve been smelling it bubbling away in the crockpot all day and I am starving! It smells so dang good!
Half an hour more and I’ll be digging into that boiling pot of yummy goodness! I tasted one spoonful when I stirred the spinach in a few minutes ago…. Oh my! Creamy beans with a savory ham flavor! So good!
- 1 lb dried great northern beans, rinsed and soaked overnight
- 2 cups ham pieces (leftover ham bone would be nice as well)
- ¼ cup brown sugar
- 1½ Tbs dried parsley
- 1 Tbs onion powder
- ½ tsp garlic powder
- ¼ - ½ tsp Tony Chachere's Creole seasoning
- ¼ tsp baking soda
- fresh ground black pepper to taste
- 1½ cups frozen leaf spinach
- Water to cover
- Drain soaked beans and rinse with cool water.
- Place beans and all remaining ingredients, except spinach, into a large crock pot.
- Place lid on crock pot and cook on high heat for 6 hours or until beans are tender.
- Gently stir in spinach and turn crock to low. Cook another 30 minutes to heat through.
- Serve hot with fresh cornbread for dipping!
You could replace the onion powder with diced sauteed onion if you wish
Could also add 1 cup chopped celery
Kielbasa could be substituted for the ham
Try some chocolate cake for even more New Year’s good luck!
It’s cool to see how everyone does these differently. We keep ours simple with the ham, beans and a brown sugar mix that flavors the broth.
We usually keep ours simple too Cat, I just thought this sounded tasty and I was trying to fit as many of those good luck foods into one dish as I could!
