Great Northern Beans simmered in a crockpot with ham, brown sugar and spinach make for a hearty and savory meal.
Ingredients
  • 1 lb dried great northern beans, rinsed and soaked overnight
  • 2 cups ham pieces (leftover ham bone would be nice as well)
  • ¼ cup brown sugar
  • 1½ Tbs dried parsley
  • 1 Tbs onion powder
  • ½ tsp garlic powder
  • ¼ - ½ tsp Tony Chachere's Creole seasoning
  • ¼ tsp baking soda
  • fresh ground black pepper to taste
  • 1½ cups frozen leaf spinach
  • Water to cover
Instructions
  1. Drain soaked beans and rinse with cool water.
  2. Place beans and all remaining ingredients, except spinach, into a large crock pot.
  3. Place lid on crock pot and cook on high heat for 6 hours or until beans are tender.
  4. Gently stir in spinach and turn crock to low. Cook another 30 minutes to heat through.
  5. Serve hot with fresh cornbread for dipping!
Notes

You could replace the onion powder with diced sauteed onion if you wish
Could also add 1 cup chopped celery
Kielbasa could be substituted for the ham
