Comfort Food: Sweet & Spicy Cornbread Casserole

sweet spicy cornbread casserole

Winter is back in full force and I’ve been cooking dishes that need to spend a little time in the oven. Turning the oven on means our home gets a little bit warmer and baking a comforting meal is good for warming the family up from the inside out! This Cornbread & Hamburger casserole is a quick way to toss together ordinary items that everyone loves.

The hearty filling has a slight heat to it from mild Ro-Tel diced tomatoes and chilies. To kick it up a notch, use the hotter variety. Each square is topped with slightly sweet cornbread. I use Jiffy mix since it’s easy and tastes great but it would also be delicious with from-scratch cornbread — just add a bit of sugar to sweeten it up. Eat it hot out of the oven as-is. Or, if you want to dress it up, top with a sprinkle of cheese and dollop of sour cream.

  4. Stir in remaining filling ingredients.
  5. Bring to a simmer over med heat and simmer 5 minutes, to heat through.
  6. For topping: In a medium bowl, mix together the cornbread mix, eggs, milk and sugar.

  8. Top with cornbread batter and spread lightly to cover filling.
  9. Bake in preheated oven 30 - 35 minutes, until cornbread is cooked through.

You can either top the cornbread batter with cheese before baking, or add a sprinkle to individual servings along with some sour cream. Tastes great as leftovers!

Pinned this to my brand new board titled “food I would definitely eat.” Hillbilly cuisine at it’s finest combining various ingredients to make a simple meal.

Gonna put this recipe right next to my “tater pie” recipe…

    Just sayin

Sounds delish. Would it work if the cornbread was on the bottom as well or instead of?

I think it would be really good with the cornbread on the bottom! I’ve seen some dishes cooked that way before, I just haven’t tried it yet — let me know if you do!

Hi – Your recipe is a great idea! Would you have a good recipe for cornbread from scratch?
(I’m not a big fan of those ‘easy mixes’ full of secondary ‘filler’ ingredients)
