Dollar General Inspired Recipe: Bacon and Spinach Tortellini Bake

Since our Dollar General Store came into our small town years ago, we have done a lot of our basic shopping there. When the store outgrew it’s space, they built a bigger building at the other end of town and started carrying even more products.

While we used to just run in for a gallon of milk and a few quick snacks for the kids’ lunch boxes, now we can do some major grocery shopping there. They have a large variety of frozen and pantry products that allow us to create affordable Dollar General easy meals from main dish to dessert.

This week, I was challenged to create an easy family meal for my family using products found at Dollar General. Easy Peasy!

I knew when I found the thick-sliced bacon and frozen tortellini that I would be making a baked casserole type dish.

Then, a big can of spinach caught my eye and I just went from there with a few other ingredients found on the store’s shelves.

Parmesan Cheese.

Alfredo Sauce.

Rolls.

Whenever I shop for family dinners at the Dollar Store, I will usually grab a quick dessert for my daughter to whip up while I cook.

She loves making these boxed refrigerator desserts on her own. And we like eating them. It’s a win win situation :).

As a side dish, I used Brown and Serve Rolls and dressed them up with a bit of butter and cheese, they were so good and really easy to make! 

Savory Brown & Serve Rolls

Serves 6 | Prep Time: 2 min min | Cook Time: 10 min | Total Time: 12 min

  • 12 Brown & Serve Rolls
  • 2 Tbs Parmesan Cheese
  • 1 tsp Parsely
  • 1 tsp Onion Powder
  • 2 Tbs Butter, melted

Place rolls in parchment lined casserole dish.

Brush with melted butter. Sprinkle with remaining ingredients. Bake in preheated 350 degree oven for 6 – 10 minutes, until tops are golden.

For the main dish, I layered canned spinach with a tortellini, bacon and jarred Alfredo sauce mixture, then topped it with more bacon and cheese. I popped it into the oven for 12 minutes and Oh my!

I still can’t believe how tasty this dish turned out!

Both of the kids went back for seconds. My son said “I thought it was going to be blah, but it’s actually really good!”, as he scooped out his second helping. Even my spinach-hating hubby liked this casserole.

Bacon makes everything better :).

Bacon and Spinach Tortellini Bake

Bacon, spinach, Alfredo sauce and three cheese tortellini are combined in this quick and easy casserole that's ready in 30 minutes.

Ingredients
  • 19 oz bag Three-Cheese Tortellini
  • 1 lb thick-cut bacon
  • 2 cups canned spinach, drained
  • 1 Tbs parsley
  • 16 oz jar Ragu Cheesy Classic Alfredo
  • ¼ cup grated Parmesan
Instructions
  1. Preheat oven to 350 degrees.
  2. Slice bacon into ½ inch pieces and cook over med-high heat until crispy. Drain and set aside.
  3. Cook Tortellini according to package directions. Drain Well.
  4. Gently stir Alfredo Sauce into tortellini.
  5. Add bacon, reserving ¼ cup.
  6. Evenly spread spinach over bottom of greased 9" x 9" casserole.
  7. Top with Tortellini mixture.
  8. Sprinkle with ¼ cup of Parmesan cheese, parsley and reserved bacon.
  9. Bake in preheated oven for 10-15 minutes, until bubbly and top is golden.
