  • ½ - 1 tsp garlic powder
  • ½ tsp celery seed
  • ½ tsp salt
  • 2 boxes Jiffy cornbread mix
  • 2 eggs
  • ⅔ c milk
  • 1 Tbs sugar
  • ½ - 1 c cheddar cheese, shredded
  • sour cream
  1. Preheat oven to 350 degrees.
  2. Spray 9"x13" casserole dish with non-stick spray, set aside.
  3. In large skillet, cook ground beef, onions and pepper until beef is cooked through and vegetables are tender.
  4. Stir in remaining filling ingredients.
  5. Bring to a simmer over med heat and simmer 5 minutes, to heat through.
  6. For topping: In a medium bowl, mix together the cornbread mix, eggs, milk and sugar.
  7. Pour ground beef mixture into prepared casserole dish.
  8. Top with cornbread batter and spread lightly to cover filling.
  9. Bake in preheated oven 30 - 35 minutes, until cornbread is cooked through.
  10. Store leftovers tightly wrapped in the refrigerator.
You can either top the cornbread batter with cheese before baking, or add a sprinkle to individual servings along with some sour cream. Tastes great as leftovers!
