Summer always keeps me scrambling to find easy to prepare, yet healthy recipes that my family will eat. We try to eat as many of the in-season fruits and vegetables that we can, they taste so good right now! Lighter fare also makes for delicious summer eating that allows us to keep active! I’ve recently discovered that Nakano Seasoned Rice Vinegar is the perfect way to let the natural goodness of the season’s produce shine through — with no added fat and low calories!
Using all natural Nakano also takes away the need to flavor our meals with heavy fats! There is a Nakano for every occasion now that so many varieties are available!
Available seasoned Rice Vinegars are; Balsamic Blend, Basil & Oregano, Original, Roasted Garlic, Red Pepper and Natural flavors. There is also a nice seasoned Red Wine Vinegar with Italian Herbs.
I was excited to Splash On some Nakano to liven up our meals this past week! I tried several different recipes in the Unexpected Flavors recipe book that Nakano has available {you can find even more Nakano recipes on the website}. The Sloppy Joes recipe that I tried used the Original flavor and was quite tasty. I think I will have to cut down on the spice a bit next time though since it was a bit hot for our family. I loved the trick of simmering the beef in rice vinegar for a few seconds to enhance the flavor!
I also splashed on some Original when I was making my potato salad yesterday. The bright flavor really was much nicer than my usual plain vinegar! My absolute favorite recipe though is the one I prepared tonight!
The Grilled Lemon Chicken actually turned into Pineapple Chicken Kebabs because I had to substitute some ingredients. I am impressed with how well they turned out and cannot wait to make them again! I love that I didn’t need to use any butter or oil to add flavor to the chicken! Homemade fries would be amazing sprinkled with rice vinegar — making those next week!

- 6 oz non-fat Greek Pineapple yogurt
- ⅓ cup Nakano Roasted Garlic Seasoned Rice Vinegar
- ½ tsp ground ginger
- ½ tsp cumin
- ½ tsp pumpkin pie spice
- fresh ground pepper and sea salt to taste
- 1 - 1½ lbs boneless, skinless chicken breast
- 2 cups of fresh pineapple cut into 1½ inch chunks
- Skewers (soak wooden ones 15 minutes)
- In glass bowl, combine yogurt, rice vinegar, ginger, cumin, pie spice, salt and pepper.
- Pound chicken breasts to ½ inch thickness and cut into long 1½ inch wide strips.
- Place chicken in yogurt mixture and stir well to coat. Cover and put in the fridge for 2 hours (can leave overnight if you wish).
- Onto skewers, alternate chicken and pineapple chunks. You should have 6 - 8 skewers depending on size of skewers and chicken strips.
- Discard remaining marinade.
- Grill kebabs over a medium heat until chicken is no longer pink -- about 15 - 20 minutes.
- Serve immediately.
You can grill on oiled grill grates or spray a sheet of aluminum foil with nonstick spray for easier clean up. You can also make these in the broiler.

We never barbeque kabobs and I don’t for the life of me know why not. Oh ya I know why. My husband does the barbequing and he does not like fruits or vegetables. I must make this happen – they look yummy.
