Winter is back in full force and I’ve been cooking dishes that need to spend a little time in the oven. Turning the oven on means our home gets a little bit warmer and baking a comforting meal is good for warming the family up from the inside out! This Cornbread & Hamburger casserole is a quick way to toss together ordinary items that everyone loves.
The hearty filling has a slight heat to it from mild Ro-Tel diced tomatoes and chilies. To kick it up a notch, use the hotter variety. Each square is topped with slightly sweet cornbread. I use Jiffy mix since it’s easy and tastes great but it would also be delicious with from-scratch cornbread — just add a bit of sugar to sweeten it up. Eat it hot out of the oven as-is. Or, if you want to dress it up, top with a sprinkle of cheese and dollop of sour cream.
- 1 lb lean ground beef
- 1 small onion, diced
- 1 green pepper, chopped
- 1 Tbs worcestershire sauce
- 1 14.5oz can stewed tomatoes
- 1 10oz can Ro-Tel diced tomatoes and green chilies (mild)
- 1 19oz can black beans, drained
- 1 cup frozen corn
- 2 Tbs parsley (or ¼ c fresh)
- ½ - 1 tsp garlic powder
- ½ tsp celery seed
- ½ tsp salt
- 2 boxes Jiffy cornbread mix
- 2 eggs
- ⅔ c milk
- 1 Tbs sugar
- ½ - 1 c cheddar cheese, shredded
- sour cream
- Preheat oven to 350 degrees.
- Spray 9"x13" casserole dish with non-stick spray, set aside.
- In large skillet, cook ground beef, onions and pepper until beef is cooked through and vegetables are tender.
- Stir in remaining filling ingredients.
- Bring to a simmer over med heat and simmer 5 minutes, to heat through.
- For topping: In a medium bowl, mix together the cornbread mix, eggs, milk and sugar.
- Pour ground beef mixture into prepared casserole dish.
- Top with cornbread batter and spread lightly to cover filling.
- Bake in preheated oven 30 - 35 minutes, until cornbread is cooked through.
- Store leftovers tightly wrapped in the refrigerator.
