Hard Cider glazed pork chops with sweet onions and apples make any weeknight taste like the weekend! Super quick to whip up-- have supper on the table in less than half an hour.
12 oz bottle of Angry Orchard Easy Apple Hard Cider
1 medium crisp Apple, peeled, cored and sliced thick (Optional)
Instructions
Preheat oven to 350 degrees.
Heat 1 Tbs olive oil in 12 inch cast iron skillet, over medium--high heat. Saute onions, garlic and tarragon until onions are almost translucent-- about 5 minutes.
Add apple, if using and saute 1 minute longer.
Move onions and apples to side of pan.
Add remaining 1 Tbs olive oil and add pork chops. Sear 3 minutes on each side. Spoon onion/apple mixture on top of each chop.
Pour ¾ bottle of the Hard Cider into the hot pan and use a wooden spoon to scrape up any browned bits. Cook 1 minute.
Using spoon, baste chops with the ale.
Cover the pan with foil and bake in preheated oven 10 - 14 minutes, until fully cooked.
Enjoy the remaining ¼ bottle of ale, while you wait for the chops to finish ;)
Remove pan from oven, plate chops and spoon the thickened ale mixture over each chop.
Serve hot with baked or mashed potatoes and a veg.
