The Boxcar Children Beef Stew Recipe

Boxcar Beef Stew from The Boxcar Children book.
Ingredients
  • 1 large onion
  • 3 Tbs vegetable oil
  • 1½ lbs. beef chuck, cubed
  • flour for dredging
  • 2 Tbs. tomato paste
  • 2 large carrots, cut into 1" pieces
  • 3 stalks celery, cut into 1" pieces
  • 1 small turnip, cut into chunks
  • 2 bay leaves
  • ¼ tsp garlic powder
  • salt & pepper to taste
Instructions
  1. Slice onion and saute in oil in large dutch oven until translucent.
  2. Dredge beef in flour and shake off excess. Brown in dutch oven.
  3. Add in carrots, celery, turnip, tomato paste, water and seasonings.
  4. Stir in 6-8 cups of water to cover.
  5. Cover and simmer stew about 1½ hours or until meat and vegetables are tender.
  6. Delicious served with Easy Drop Biscuits.
Notes

I substituted olive oil for the veg oil.
I used beef loin steak cubed, you could probably use any cut, just simmer it until tender.
I ended up using the whole 6oz can of tomato paste for added flavor, adjust to your liking.
We didn't have turnip so we substituted 2 med. potatoes.
I substituted 2 cloves minced garlic for the powder and sauteed it with the onion.
