Creamy Coconut Milk Hot Chocolate

A rich and creamy hot chocolate made with coconut milk — perfect for cold winter evenings!
  • 1 14 oz can coconut milk
  • 2 Tbs Cocoa Powder
  • 1 tsp Pumpkin Pie Spice
  • ¼ cup Dark Brown Sugar
  • pinch of salt
  • ¼ cup Semi-Sweet Chocolate chips
  • ½ – ¾ cup half & half or water
  • ½ tsp Pure Vanilla Extract
Optional Toppings
  • Extra Creamy Whipped Cream
  • Finely Chopped Hazelnuts
  • Marshmallows
  1. In medium saucepan over med-high heat, combine coconut milk, cocoa, sugar and salt.
  2. Stirring often, heat until mixture just comes to a boil.
  3. Add chocolate chips and stir until completely melted.
  4. Stir in half & half, starting with ½ cup and adding up to ¾ cup, to taste.
  5. Add vanilla extract and heat mixture until mixture is heated through.
  6. Whisk mixture until frothy and serve immediately.
  7. Ladle hot chocolate into 4 cups.
  8. Add toppings of choice & enjoy!
