Creamy Coconut Milk Hot Chocolate

- 1 14 oz can coconut milk
- 2 Tbs Cocoa Powder
- 1 tsp Pumpkin Pie Spice
- ¼ cup Dark Brown Sugar
- pinch of salt
- ¼ cup Semi-Sweet Chocolate chips
- ½ – ¾ cup half & half or water
- ½ tsp Pure Vanilla Extract
- Extra Creamy Whipped Cream
- Finely Chopped Hazelnuts
- Marshmallows
- In medium saucepan over med-high heat, combine coconut milk, cocoa, sugar and salt.
- Stirring often, heat until mixture just comes to a boil.
- Add chocolate chips and stir until completely melted.
- Stir in half & half, starting with ½ cup and adding up to ¾ cup, to taste.
- Add vanilla extract and heat mixture until mixture is heated through.
- Whisk mixture until frothy and serve immediately.
- Ladle hot chocolate into 4 cups.
- Add toppings of choice & enjoy!
