Quickie Peach Crisp with Crunchy Oatmeal Topping

A super quick dessert using canned peaches and homemade crispy oatmeal topping.
Ingredients
Filling:
  • 1 28oz can sliced peaches, drained
  • 1 28oz can pear halves, drained and halved :)
  • ½ tsp vanilla extract
  • cinnamon
  • sugar
Topping:
  • 1 c old fashioned oats
  • 6 Tbs all purpose flour
  • ¾ to 1 cup brown sugar
  • 1 stick butter, just barely softened
  • cinnamon
  • ¼ tsp salt
Instructions
  1. Preheat oven to 375 degrees. Spray casserole with non-stick spray.
  2. Dump drained peaches & pears into casserole. Sprinkle with the cinnamon sugar mixture you made for your toast the other day when you were craving something sweet (about 1 tsp). Drizzle the ½ tsp vanilla on top.
  3. In med bowl mix together the oats, flour, brown sugar, a shake of cinnamon and pinch of salt.
  4. Cut in the butter until it is well incorporated and the mixture clumps nicely when pressed together.
  5. Use your hands to press it together for a second and get it really clumpy then spread it over the peaches & pears in casserole, making sure to make it as ragged and clumpy as possible. (That's how you get the crunchy bits)!
  6. Bake in the preheated oven about 25 - 35 min. It's done when the fruit is bubbling and the topping is just getting crisped and golden, there will be darker spots on some of the higher clumps.
  7. Refrain yourself from picking off the big clumps because they WILL burn your tongue! Trust me, I know this from years of experience.
  8. Serve in bowls with a big scoop of vanilla ice cream and wonder why you bothered to make dinner when everyone would have been perfectly happy just eating this :)
  9. Don't forget to hide what's left so you can eat it in the morning for breakfast before the kids wake up. Not that I would do anything like that, nope, not at all.
