Spring Brunch Strata with ham, potatoes and cheese

This delicious egg strata is full of ham and vegetables and is big enough to feed a crowd!
Ingredients
  • ¾ lb smoked ham slice - diced
  • 1 medium red pepper, diced
  • 1 medium orange pepper, diced
  • 6 green onion, sliced thin
  • 2 cups fresh baby spinach, steamed
  • 8 oz extra sharp cheddar, shredded
  • 1 20 oz package of Simply Potatoes Diced Potatoes with Onion
  • 4 large hard rolls or croissants (about 6-8 cups)
  • 12 Eggland's Best All-Natural Cage Free Large Eggs
  • 1 quart half-and-half
  • salt and pepper to taste
Instructions
  1. Spray 9x13" baking dish with non-stick olive oil spray. In a medium bowl, whisk together the eggs, half-and-half, salt and pepper, set aside.
  2. In another medium bowl, lightly toss together the ham, peppers, green onion, spinach and cheese. Tear bread into small pieces, removing any hard crusts.
  3. Into prepared pan, layer half of the torn bread. Evenly distribute half of the ham mixture over the bread. Add half the bag of potatoes. Repeat layers with remaining ingredients.
  4. Place baking dish onto an aluminum foil lined baking sheet, to catch any spills. Slowly pour the egg mixture over top of the layered ingredients. Cover with aluminum foil and place in the refrigerator overnight.
  5. In the morning, take the prepared strata out of the refrigerator an hour before putting into the oven, to come to room temperature.
  6. Preheat oven to 350 degrees. Place strata in preheated oven and bake for 55 - 65 minutes or until center is just set. Turn on broiler and broil for 2 - 5 minutes, until top is golden and dish is puffed.
  7. Let set five minutes before cutting to serve.
Notes

Notes: You can substitute any type of vegetables and/or meat -- try to have 4 to 6 cups of fillings (plus counting the potatoes and cheese) for a nice hearty strata. Here are a few more combinations I will be trying:

-- mushrooms, spinach, roasted turkey breast, shallots, Gruyere cheese
-- asparagus, bacon, green onion, orange pepper, Havarti cheese

Also, I'm sure you could bake this the same day, just leave it sit for half an hour or so to let the bread soak up some of the liquid.
