In total, the U.S. produces about 75 billion eggs a year, about 10% of the world supply. (That's a lot of eggs… but only 10%!? Now I'm curious about where the other 90% comes from!)

Baked Eggs & Spinach recipe sounds yummy and healthy!
We raise our own chickens for fresh eggs and we eat them everyday and sometimes more than once a day. One of my kids favorite egg recipe is "eggs in a nest". With a circular cookie cutter, press into a fresh piece of wheat bread (can use white too) and remove the center circle you just made. Butter a skillet and let bread toast a little. Then crack an egg and drop into hole cutout. Let the egg cook to a medium well with some runny yolk, but the rest of the egg fully cooked. You can then dress this however you like. One of my kids does salsa, one does country gravy and I do a little splash of hot sauce. So yummy!
