Orange Sage Roasted Chicken & Potatoes

Ingredients
  • 1½ lb chicken breast tenderloins
  • 3 medium sweet potatoes, peeled and cubed
  • 2 medium Idaho potatoes, peeled and cubed
  • 2 large oranges
  • 1 Tbs soy sauce
  • 1 Tbs clover honey
  • 1 tsp fresh ginger, minced
  • 1½ Tbs fresh sage, minced
  • 2 Tbs extra virgin olive oil
  • salt & pepper to taste
  • extra sage leaves
Instructions
For marinade:
  1. Juice 1 orange and half of the other one and mix together with soy sauce, honey, ginger, sage, salt and pepper. Slowly whisk in the olive oil.
  2. Place cubed potatoes in a gallon storage bag and pour half the marinade over the potatoes. Seal and shake to coat potatoes in marinade.
  3. Place chicken tenderloins in another gallon storage bag and pour remaining marinade over chicken. Seal and shake to coat.
  4. Place bags in the fridge for 1 hour.
  5. Preheat oven to 400 degrees. Spray 9″x13″ baking dish with non-stick cooking spray.
  6. Pour potatoes into bottom of prepared pan. Place chicken on top of potatoes.
  7. Slice remaining orange half and place on top of chicken and add a few extra sage leaves.
  8. Bake uncovered for 35 – 40 minutes, or until chicken is cooked through and potatoes are tender. (Halfway through cooking time, baste chicken once with marinade in the bottom of the pan.)
