Cover and allow dough to rise in a warm location until doubled (about 1 hour)
For Rolls:
Divide one dough into twelve sections.
Gently stretch each section into a 4 inch circle. Place 4-8 slices pepperoni on each section and top with 1 slice of cheese, torn into pieces to fit.
fold in edges and pinch to seal filling inside.
Place onto cookie sheet that has been sprayed with non-stick olive oil spray.
Cover and let rise 1 hour, until puffy.
For Bread:
Gently stretch one dough into a large rectangle.
Place slices of cheese to cover leaving ½ border of dough.
Cover cheese with as much pepperoni as you like.
Starting from long edge, lightly roll dough up. Pinch edge to seal.
Place roll onto a lightly greased cookie sheet or un-greased pizza stone.
Gently pinch ends of roll together to form ring, stretching a bit to even out.
Cover and let rise in warm place about one hour, until puffy.
Preheat oven to 375 degrees.
Bake Rolls about 11-13 minutes until bottoms are just crisp and tops are golden brown.
Bake Bread about 15 - 20 minutes or until golden brown.
Remove to serving platter and serve warm or store in airtight bags in fridge.
Notes
You will most likely want to place a sheet of aluminum foil on the rack under your cookie sheet if it does not have a rim. The pepperoni grease can leak out of the rolls and create a mess in your oven if you don't!
