My favorite Egg Salad sandwich recipe

A creamy mayonnaise based egg salad sandwich recipe.
  • 6 hard boiled eggs - chilled
  • 1 Tbs rice wine vinegar
  • 1 Tbs mustard
  • ½ Tbs dried parsley
  • ¼ tsp celery seed
  • salt and pepper to taste
  • 5 Tbs mayonnaise
  • bread of choice
  1. Cut peeled and rinsed eggs lengthwise into quarters, then across into thirds.
  2. In small bowl, combine eggs, and remaining ingredients lightly until well mixed.
  3. Taste and adjust seasoning if needed.
  4. Serve on your choice of bread with optional lettuce.
  5. Store remaining mixture tightly sealed in fridge for up to 2 days.
