NatureRaised Farms® Orange-Sage Oven-Roasted Chicken and Potatoes

It’s mid-summer and most nights, the kids and hubby start roaming around the kitchen at 4pm, wondering what’s for supper. I love to toss together simple and fresh one-dish meals for the family, so I can get in and out of the kitchen fast. Using fresh fruits and veggies from the farmer’s market along with a good cut of meat or chicken is the easiest way to make everyone happy. I usually fall back on using a package of all natural chicken for a stress-free weeknight meal, it’s such a versatile protein and everyone likes it. Last night, we enjoyed an easy oven roasted chicken and sweet potato dish that I marinated with an orange and sage mixture. It was delicious!

Because we have backyard chickens of our own, I want to be sure that the chicken we buy at the store is from a company who cares about the well being of the animals they raise for our consumption.

I do try to keep our meals as fresh and healthy for our family as I can. We know we’re eating a home cooked meal prepared with simple ingredients and& natural delicious tasting chicken.

To compliment a package of chicken tenderloins, I mixed up a marinade featuring fresh sage from the garden, oranges and fresh ginger. I added the marinade to both the chicken and to a cubed sweet potato and potato mixture. We all love broccoli so I also roasted a sheet pan of large florets — we loved the way they tasted alongside the bright orange flavor of the marinade. Roasting the broccoli allowed the veggies to keep all their amazing flavor, instead of boiling it away in a pot of water.

To roast the broccoli, I just cut up two medium heads, then drizzled with 4 Tbs of olive oil, salt and pepper. I roasted them on a foil-lined sheet for the last 25 minutes of the chicken cooking time and turned them over once, so both sides would have color.

Sherbert Cups

For dessert, we kept things super simple by adding a big scoop of rainbow sherbert to pre-made shortcake cups then topping with a dollop of whipped cream and a fresh cherry. (Next time, I plan to pre-bake made-from-scratch cupcakes to use as the sherbert base, this was a last minute idea that was tasty but would be SO much better with fresh cupcakes!) They can stay in the freezer while the chicken and veggies roast, so your meal is complete without any last minute prep.

Even Chris liked this meal, he usually doesn’t go for sweet potatoes or orange flavors. Since his plate was clean at the end of dinner, I declare this easy chicken recipe a winner!

Ingredients
  • 1½ lb chicken breast tenderloins
  • 3 medium sweet potatoes, peeled and cubed
  • 2 medium Idaho potatoes, peeled and cubed
  • 2 large oranges
  • 1 Tbs soy sauce
  • 1 Tbs clover honey
  • 1 tsp fresh ginger, minced
  • 1½ Tbs fresh sage, minced
  • 2 Tbs extra virgin olive oil
  • salt & pepper to taste
  • extra sage leaves
Instructions
For marinade:
  1. Juice 1 orange and half of the other one and mix together with soy sauce, honey, ginger, sage, salt and pepper. Slowly whisk in the olive oil.
  2. Place cubed potatoes in a gallon storage bag and pour half the marinade over the potatoes. Seal and shake to coat potatoes in marinade.
  3. Place chicken tenderloins in another gallon storage bag and pour remaining marinade over chicken. Seal and shake to coat.
  4. Place bags in the fridge for 1 hour.
  5. Preheat oven to 400 degrees. Spray 9″x13″ baking dish with non-stick cooking spray.
  6. Pour potatoes into bottom of prepared pan. Place chicken on top of potatoes.
  7. Slice remaining orange half and place on top of chicken and add a few extra sage leaves.
  8. Bake uncovered for 35 – 40 minutes, or until chicken is cooked through and potatoes are tender. (Halfway through cooking time, baste chicken once with marinade in the bottom of the pan.)

    This sounds exactly like the type of chicken I would purchase for my family. It’s funny, before having a family I didn’t pay much attention to what I was eating but now I take health into consideration first before a purchase.

    Now being pregnant is really making me want to try this meal! I love the added potatoes, I’m all about trying to make less of a mess and dinner in a little dishes as possible. Great recipe!

      Meals that can cook or bake all in one dish without being the typical casserole are one of my favorites, it’s much easier to get everything to the table at once and hot! Congrats!

      I always like to find ways to use the fresh sage from the garden, it went so well with t he orange that I am going to try a similar prep with boneless pork chops!
