With our hectic schedule of basketball practice, away games and school pick-ups, life can get a little crazy! Barilla pastas have saved the night on more than one occasion, when I have only a short window of time to get supper served before we’re headed out the door, yet again. With a seemingly endless number of ways and methods to cook with pasta, everyone in our family enjoys gathering around the table together for a big bowl. Spending even a few minutes together around the table is so important as we take this time to share a little bit about our day and just connect with each other again.

I know that as long as I have a box of pasta in the cupboard, I can whip up a nutritious and filling meal for my family in no time. In fact, Barilla surveys show that pasta is recognized by parents and non-parents as a tasty (88%) and easy (87%) meal option and one that can be prepared using on-hand ingredients from a pantry (82%). I agree with those statistics 100%! The Barilla Plus pastas are a favorite of mine since they sneak a little extra fiber, protein and ALA Omega 3 into my family’s diet.

We tried several of the recipes in this free cookbook and I would love to share our favorite Barilla pasta recipe with you!

Barilla Ditalini with White Bean soup is super tasty as is. I whipped up a big bowl to share with the family before my daughter’s basketball game. Served with a crusty loaf of bakery cheese bread, it was such a  comforting meal to warm us up on a chilly fall day. It felt great knowing I was fueling my daughter for her game without spending hours in the kitchen. I already have plans to make this soup again.

Next time, I am going to add half a bag of fresh spinach right before serving. It would even be great to sub out half the beans for a cup or two of leftover rotisserie chicken. I think the fresh herbs really make this dish special so try to use them, if you can!

Ditalini White Bean Soup

Barilla Ditalini & White Bean Soup

Ditalini pasta tubes are combined with fresh tomatoes, herbs, veggies and white beans to create a warming and nutritious soup.

Serves: 8 - 10
Ingredients
  • 1½ c Barilla Ditalini, dry
  • 3 Tbs extra virgin olive oil
  • 1 c onion, diced
  • 1 c carrot, diced
  • 1 c celery, diced
  • 2 large cloves garlic, crushed
  • 48 oz low sodium chicken broth
  • 19 oz cannellini beans, drained and rinsed (about 1½ cans)
  • 4 large Roma plum tomatoes, diced
  • ¼ c fresh Italian parsley, chopped and divided
  • 1 Tbs fresh oregano, chopped
  • fresh ground black pepper and sea salt to taste
  • 1 c Parmigiano-Reggiano cheese, freshly grated and divided
Instructions
  1. Heat oil in large pot over medium-high heat.
  2. Add onion, carrot, celery and garlic.
  3. Saute 3 - 4 minutes until tender, stirring occasionally.
  4. Add chicken broth and beans. Return to simmer.
  5. Stir in tomatoes, Ditalini, 2 TBS of the parsley, oregano, salt and pepper.
  6. Bring to a boil and boil 10 minutes, stirring occasionally.
  7. Remove from heat, stir in remaining parsley and ½ cup of cheese.
  8. Serve with remaining cheese sprinkled on top of individual bowls.
Notes

Options:
~Add 4 cups fresh spincah along with the cheese and cook 1 minute more to wilt.
~Substitute ½ the white beans for leftover cooked chicken for a meatier dish.
~Crusty bread is great to soak up the broth!

    This sounds delicious and it’s something I actually think EVERYONE in the house would like LOL. And 38 minutes isn’t bad – I could whip this up quickly on those nights when we have cub scouts or karate lessons.

    Looks delicious! I love pasta but don’t use it in many ways aside from the usual side dish or with sauce. I love the idea of incorporating it into this soup recipe!
