Summer days can be lazy and relaxing or full of activity and excitement! No matter how we spend our time, it’s always nice to be able to whip up quick everyday desserts for my family to enjoy together. Because I want to spend time with my family — not sweating in the kitchen, I always have COOL WHIP Whipped Topping on hand in the freezer.

There are so many ways to use COOL WHIP to make dessert a little extra special. Many times, we will just add a dollop .. or two.. or three :) on top of a bowl of fresh fruit. There is something so simple and delicious about a bowl of bright blue blueberries and red strawberries that goes perfectly with the creamy goodness of  COOL WHIP.

One dessert that has always been one of my daughter’s favorites is pistachio fluff, or as we lovingly know it — “The Green Fluff“. My daughter has LOVED this simple dessert since the first time she tasted a version of it at two years old. She loves it so much that sometimes I will even resort to buying a small tub of the overpriced premade stuff at the deli counter when she begs. It is so much better when made fresh at home though! When I asked Pie what she thought we should make with our tub of COOL WHIP, the expected answer was the GREEN FLUFF!

Green Fluff is a fun dessert that the kids can help you make. They will enjoy stirring everything together and you really cannot mess it up. This everyday dessert starts out with three basic ingredients; COOL WHIP, pistachio pudding mix and a can of pineapple. The extras that you stir in are just a matter of taste {or what’s hanging out in the cupboard}.

Usually, we like to add mini marshmallows — white or colored, chopped maraschino cherries, halved grapes, fruit cocktail and my favorite extra — mandarin oranges!

If you want, you could also add sliced bananas or use fresh oranges instead of canned. It’s really up to you!

Mix it up, taste it to see if you need to add any more fruit {or another scoop or two of COOL WHIP… yum!} and chill it for a few hours before serving.

A quick summer dessert made with COOL WHIP, pistachio pudding, pineapple and whatever fruit you have on hand!

Serves: 16-20
Ingredients
  • 1 8oz tub COOL WHIP Whipped Topping, thawed
  • 1 4oz box pistachio pudding mix, unprepared
  • 1 20oz can crushed pineapple, do NOT drain
  • 2 cups mini marshmallows
  • 1 cup seedless green grapes, halved
  • 1 jar marachino cherries, drained well and halved
  • 1 11oz can mandarin oranges, drained
  • 1 15 oz can fruit cocktail, drained, juice reserved
optional garnish
  • ½ cup chopped pecans
  • fresh cherries
Instructions
  1. In large bowl, mix together the pistachio pudding mix and can of pineapple. Gently fold in COOL WHIP.
  2. Stir in remaining ingredients just until blended.
  3. Add reserved fruit cocktail juice until mixture is desired consistency.
  4. Cover and chill 2 - 4 hours.
  5. Top each serving with a tsp of chopped pecans and a fresh cherry.
  6. Serve and enjoy!
Notes

You can also stir in sliced bananas and or fresh oranges.
Sometimes I add 2 or 3 drops of green gel food coloring for a little extra punch.
