My favorite Split Pea and Leftover Ham Soup #recipe

We had a wonderful Easter Dinner at our home this year! I made a large ham and luckily we had quite a bit of ham left on the bone after everyone had their fill. Never ever ever waste a good ham bone, it will make any soup taste out of this world! This happens to be my favorite Split Pea soup recipe.

What’s that? You don’t think anyone in your family will eat split pea soup?

I never thought mine would either, until I tried it one day. Everyone in our house now loves this soup every time I make it and they even go back for seconds! The peas turn into a rich creamy puree and the ham flavor from the roasted bone is melt in your mouth delicious! So go bake up a ham to get that leftover ham bone!

This delicious Split Pea soup makes good use of that leftover meaty ham bone!

Ingredients
  • 1 large meaty ham bone
  • 1 medium onion, chopped
  • 32 oz box of Chicken Stock / broth
  • 1 quart of cold water

  • 16 oz bag dried Green Split Peas
  • 2 quarts cold water

  • 3 stalks of celery chopped
  • 3 large carrots, chopped
  • 3 medium potatoes, peeled and chopped
  • 1 pinch dried Marjoram
  • 1 Tbs fresh minced Rosemary (or 1 tsp dried)
  • ½ cup fresh chopped Parsley (or 2 Tbs dried)
  • salt & fresh ground pepper to taste

  • ¼ cup heavy cream
Instructions
  1. In a large pot, place your ham bone, onion, bay leaves, chicken stock and cold water. Bring to low boil then turn heat down to simmer.
  2. Meanwhile. Rinse peas and place in medium pot with 2 quarts of water. Bring to boil over high heat. Simmer for 2 minutes then remove from heat and let sit for one hour, covered. Drain and rinse.
  3. After peas have sat for an hour while ham simmers -- add peas to the ham bone and chicken broth pot along with all of the remaining ingredients.
  4. You may need to add up to another quart of water, depending on thickness and amount of ham that you had left on your bone.
  5. Bring to boil, then turn to low and simmer for 35 minutes to 1 hour, or until veggies are fork tender and peas are smooth.
  6. For a richer soup, Ladle into bowls, then swirl a Tablespoon of heavy cream into each individual serving - not necessary but it is a tasty addition!
