{almost} Wordless Wednesday – the making of the rainbow cake

When I saw an adorable rainbow cake on Pinterest awhile back, I knew that we would have to try making one of our own! St. Patrick’s Day was the perfect time to bake up this colorful treat and I think that my daughter Pie did a wonderful job! We had a bit of a mishap with the baby cake…

{mom tried to take it out of the pan before it was cool.. Ooops!}

The big one was delicious and quick to make with a box of white cake mix, a can of ginger-ale and some gel food coloring! We frosted our cake with a box of sugar free vanilla pudding mixed together with a carton of Cool Whip. Super Simple and delicious!

There wasn’t a Pot o’ Gold at the end of this rainbow but it sure tasted good!

p.s. If you’re going to try this, parchment paper on the bottom of the pan, lots of non-stick spray and patience for the cake to cool COMPLETELY are key ;)

    I’ve done vanilla and chocolate swirly cakes but I haven’t ever thought about doing rainbows. Totally gonna try this out for Zoe’s birthday in June! :) My kids HATE store bought cakes so if I’m going to have to bake one anyway I might as well bake a FUN one :) Thanks for sharing!
