Foil Baked London Broil with sweet peppers and onions #recipe + skillet cornbread

Sometimes you just want to throw dinner in the oven, set the timer and be done with it.

This recipe for foil baked steak is perfect for those nights when you just don’t feel like cooking. Your family will think you planned it all out, when in reality you just threw together a few items from the pantry and served it up. My favorite kind of meal :).

All you need to get started is a big juicy piece of beef – we like to use London Broil, it always turns out deliciously fork-tender.

Place your meat onto a large double layer of aluminum foil {or use heavy duty foil}. Season with fresh cracked black pepper and sea salt. Scatter cut up red peppers and onion over top of the steak.

Sprinkle one envelope of dry onion soup mix {or mushroom soup mix} over top of the meat and vegetables.

Drizzle 2 – 3 Tablespoons of extra virgin olive oil over top of the onion soup mix, steak and veggies.

*Oops! I forgot to tell you, preheat your oven to 400 degrees Fahrenheit before you start!

Place a single layer of foil over top of the prepared meat. Fold all four edges of the bottom and top foil together to form a loose packet around the meat and vegetables. If you like baked potatoes with your meat, scrub a few potatoes and place them on the pan around the foil packet. Place in the oven and set the timer for 50 minutes.

When there are 25 minutes left on the timer, melt a half stick of real butter in a large cast iron skillet over med-high heat. Turn burner off.

Pour one package of prepared Jiffy cornbread mix into the hot skillet. Gently spread it out a bit {it doesn’t have to reach all the way to the edges}.

When 20 minutes are left on the timer, add the skillet to the top rack of the oven so that it will be done at the same time as your foil steak. Cornbread will be browned around the edges when ready.

When the timer goes off. Remove everything from the oven. Carefully unfold a back corner of the foil to let steam escape. Uncover and slice meat into 1/2 inch slices. Serve with a spoonful of the peppers, onions and gravy that has accumulated on the bottom of the foil – so delicious!!

Your cornbread won’t even need butter, it’s already been soaking up all that melted goodness while baking!

Ingredients
  • 1½ - 2 lb London Broil (or similar cut of meat)
  • fresh pepper
  • sea salt
  • 1 envelope dry Onion Soup Mix
  • 1 large sweet red pepper, chunked
  • 1 small onion, sliced
  • 3 Tbs Extra Virgin olive Oil
also needed
  • heavy duty aluminum foil
Instructions
  1. Preheat oven to 400 degrees.
  2. Place a large sheet of heavy duty aluminum foil on a sheet pan. Place steak in center of foil.
  3. Season meat with salt and pepper to taste.
  4. Add peppers and onions to top of meat and sprinkle envelope of onion soup mix over all.
  5. Drizzle olive oil over top the soup mix.
  6. Place another layer of aluminum foil over meat. Fold edges in to create a loose packet.
  7. Bake at 400 degrees for 50 minutes for well done steak.
  8. Slice steak and serve with a spoonful of the peppers, onions and accumulated gravy.
Notes

-- you could also use dry mushroom soup mix instead of the onion.
-- bake a few potatoes along side the packet and serve with butter and sour cream.
-- bake a box of cornbread mix in a cast iron skillet at same time for a complete meal.

    Making this as i type this. I opted to use red, yellow and green peppers and not use the onion soup mix, but i’m sure it will be just as yummy.

    The London Broil I have is just over 3lbs. Do you know how much time I need to add to the cooking time?

      I would probably lower the temp to 325 and bake it for an hour and 15 minutes to an hour and 30 minutes. The basic guidelines are 25 to 30 minutes per pound. Hope that helps!

    Just tried this; great recipe! I reduced the heat to 350 and made my own mix of spices. Also added carrots, celery and fresh sweet potatoes. I will definitly make this again. Thanks!
