Pie and I made Easter cupcakes today after seeing some cute ideas for flowers, bees, bunnies and ducks on the dash site (they have great video tutorials for the cupcakes if you need a little help). We cheated and used box mixes but I did stir poppy seeds into the lemon cake mix, and golden raisins into the carrot cake mix. We also made a batch of this Whipped Cream Frosting to top them with and it was very YUMMY!
For the flowers we cut strawberry marshmallows into to quarters and dipped in colored sugars. We also used a few drops of green food coloring to dye a cup of coconut for our “grass”. With a jellybean placed in the center of the petals, we have a tray full of pretty posies to share with the family tomorrow!
