Happy Thanksgiving and hey what kind of potatoes are you having?

leafThanksgiving already! I’m being a weirdo this year and making roasted sweet and white potatoes instead of mashed. Yes that’s right… instead of… not as well as. I don’t think my step-dad was too thrilled with this plan when I cheerily told him my menu idea over the phone the other day. A resounding “OH” came out of the phone before he passed the phone to my mother.

I have resolutely stuck by my plan of a NON-mashed potato holiday but, I may chicken out. I had originally told him I was making BAKED sweet potatoes, which has now changed (since 5pm when I changed my mind) to ROASTED sweet potatoes / butternut squash / white potatoes drenched in herbed olive oil. Then I think to myself how much trouble is it really to just make some mashed potatoes for the guy. Who am I to deprive my dear step-dad of his lumpy Thanksgiving mashed potatoes?? Geesh what the heck was I thinking anyway trying to change things up lol! I have the feeling I just talked myself into making BOTH.

I wish all of you a very Happy and Healthy Thanksgiving! I am so thankful for my mashed potato loving family, my friends, and all of you! Enjoy the time spent making memories this holiday weekend! My Momma sent me this in an email earlier so thought I’d share.

T’was the night after Thanksgiving… I just couldn’t sleep,
I tried counting backwards, I tried counting sheep.

The leftovers beckoned – the dark meat and white,
but I fought the temptations with all of my might.

Tossing and turning with anticipation,
the thought of a snack was Infatuation.

So, I raced to the kitchen, flung open the door,
and gazed at the fridge, full of goodies galore.

I gobbled up turkey and buttered potatoes,
pickles and carrots, beans and tomatoes.

I felt myself swelling so plump and so round,
“til all of a sudden, I rose off the ground.

I crashed through the ceiling, floating into the sky,
with a mouthful of pudding and handful of pie.

But, I managed to yell as I soared past the trees…
Happy eating to all – pass the cranberries, please.

May your stuffing be tasty, may your turkey be plump,
may your ‘tater ‘n gravy have narry a lump.

May your yams be delicious, may your pies take the prize,
may your holiday dinner stay off of your thighs.
