A big bag of Potatoes

potatoesOn Monday we were visiting with my Mom when my 2nd Dad got home from work. He had brought home a few 50lb bags of potatoes for them and a few other members of the family to split. We bought one bag off of him because they looked so yummy! We figured $10 for 50lb of potatoes wasn’t a bad deal at all. That’s only .20 a lb, we usually pay at least .34 – .40 for a 5lb bag. So we saved $6 – $10! Plus these are red potatoes! Yum! Red potatoes seem to have a sweetness to them and a lovely soft consistency suited to lots of dishes. I’ve been making potato recipes all week! I can tell that the potatoes are filling because I haven’t been snacking as much in between meals! This may be a good thing! Frankly I think the kids are getting sick of asking me what’s for dinner, I merrily reply “Somthin’ with taters” :) They’re not impressed.

So far this week our menu has included:

  • Monday: “Squished” Potatoes with creamed Tuna & peas
  • Tuesday: Crockpot Stuffed Peppers with Mashed Potatoes, corn & Great Peanut Butter Cookies
  • Wednesday: Fried Potatoes with Fried Eggs, Italian Bread Toast & Mock Apple Pie dessert
  • Thursday: One Pan Country Style Chicken & Vegetable Bake

I’m trying to decide what’s on the menu for the rest of the week, I’m thinking something like this:

  • Friday: Break from Potatoes! maybe? Probably not…..
  • Saturday: Potato Soup with Homemade Rolls (or biscuits)
  • Sunday: “Squished” Potatoes with Sauteed Chicken Breast, Green Beans & Pudding

Squished potatoes are just baked (or microwave baked) potatoes. Pie has always called them Squished though and we eat them with a pat of butter and a large spoonful of sour cream! Recipes for some of the dishes will be posted very soon!

That should take care of some more of those spuds! Now what about next week…..
The kids are going to hate me! lol

    What about homemade french fries? Fritters? Ever had potato cakes? LOL… I love torturing children.

    If I try to do something like this I usually give in before the kids do. I DO NOT like peeling potatoes. Can't wait to see what else you come up with.

    I bought a 50 lb. box of potatoes at Sam's Club month before last when my grand daughter and her husband were staying with us till they found another house. We cooked those potatoes every way under the sun!! Boy, were they good!! We even fried some with onions for breakfast along with regular "breakfast things". They were delicious. We ate them all that month. I always bought them that way when my kids were still at home. A tip – do not peel potatoes!! I never peel them, not even for mashed potatoes.
