Favorite Recipes – Rich & Creamy French Toast

This is my favorite French Toast.. Right now. French Toast always seems to come out different, like most people probably do, I just mix up a little of this and a little of that. I liked how this one turned out though – yummy and sweet! I need to make some more of this, maybe breakfast tomorrow, with some fresh blueberries :)

French Toast is made rich and creamy with evaporated milk!

Serves: 6
Ingredients
  • 5 eggs
  • 3 egg whites
  • 4 oz evaporated milk
  • 1 Tbs sugar
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • pinch of salt
  • 10-13 bread slices
Optional
  • butter
  • syrup
  • fruit
Instructions
  1. Beat the eggs and egg white together in a pie tin or deep bowl until very well mixed, almost fluffy. Beat in the evaporated milk, sugar, cinnamon, vanilla and salt.
  2. Spray round cast iron griddle with cooking spray, heat over med-hot heat until a drop of water sizzles.
  3. Dip both sides of bread in egg mixture completely coating it. Drop onto griddle and cook until bottom is golden brown. Flip and cook until puffed and golden. There's nothing worse than mushy, soggy, french toast so be sure it's cooked through!
  4. Serve slathered with real butter and pancake syrup, or maple syrup if you have it. We also like ours with fresh blueberries, strawberries, peaches and or cool whip!
